  • 150 g (1/3 lb / 3/4 cup) dark chocolate – choose chocolate around 50% cocoa; very dark chocolate can become too hard once the cake cools
  • 3 pears – firmer varieties like Williams, Conference, or Bosc
  • 2 large eggs
  • 130 g (2/3 cup) sugar
  • 100 g (4/5 cup) all-purpose flour
  • 8 g (2 tsp) baking powder
  • 200 ml (3/4 cup + 2 tbsp) milk

How to Make the Chocolate Pear Cake

Preparing the Cake Batter

Start by preheating your oven to 180°C (350°F) ventilated or 190°C (375°F) static. Line a 22 cm (9-inch) springform pan with parchment paper, grease the edge of the cake pan with a little butter and lightly flour it, to ensure the cake comes out easily. Chop the dark chocolate into coarse pieces (1) and peel and dice the pears into small, even cubes (2).

In a large mixing bowl, whisk the eggs together with the sugar until the mixture is smooth and slightly frothy. Gradually add the sifted flour and baking powder, then pour in the milk, little by little, mixing gently until you achieve a smooth, uniform batter. The batter should be creamy but not too runny.

Incorporating Pears and Chocolate

Once the batter is smooth and creamy, gently fold in the diced pears and the chopped chocolate (3). Make sure they are evenly distributed, so each slice contains both fruit and chocolate. The pears will soften during baking and release their natural sweetness, while the chocolate will melt slightly into the batter without disappearing completely.

This step is essential for achieving the cake’s signature texture: moist, rich, and almost creamy, with soft chocolate pieces that remain pleasant to bite into even after the cake has cooled.

Baking the Cake

Pour the batter into your prepared pan, spreading it evenly with a spatula. Place the pan in the preheated oven and bake for 45–50 minutes. Check for doneness by inserting a toothpick into the center: it should come out mostly clean with just a few moist crumbs attached.

Once baked, let the cake cool in the pan for 10–15 minutes. Then carefully remove the springform and transfer the cake to a wire rack to cool completely (4) before slicing.

Storage Tips

This chocolate pear cake keeps very well for a short time, thanks to the natural moisture of the pears and the creamy texture of the batter. Store it in an airtight container at room temperature for up to 2 days, especially if your kitchen is cool.

If you prefer, you can refrigerate the cake for up to 5 days. In this case, always bring it back to room temperature before serving: this allows the chocolate to soften again and restores the cake’s moist, creamy consistency.

Freezing is not recommended for this recipe. The presence of fresh pears and chocolate pieces tends to suffer from freezing, resulting in a grainier texture and firmer chocolate once thawed, which takes away from the cake’s signature melt-in-your-mouth feel.
