This version also has a little family story. One year, I was gifted a huge quantity of apples, so many that just looking at them made me smile… and a bit worried, since I couldn’t eat a kilo of apples a day! Not wanting to waste food, I searched online and found the Magic Apple Cake. Having already tried and loved the classic magic cake, I decided to experiment with this version, adding a few personal touches.
The key to this cake? Slicing the apples very thinly, almost transparent. If it’s difficult with a knife, a mandoline slicer is your best friend. This cake is perfect when you need to use a lot of fruit: it requires more apples than a classic apple cake. It’s easy to make, but it takes some time to peel, core, and slice the apples. The result, however, rewards every minute spent, filling your kitchen with a wonderful aroma and offering a soft, luscious bite in every slice.
How to Make Apple Magic Cake Recipe
The method for making this cake is very simple, but following the exact order of the ingredients is essential for the best result. Respecting the sequence ensures the cake bakes evenly and achieves its signature creamy texture.

Ingredients (for a 24 cm / 9-inch cake pan)
- 1 kg (2.2 lbs) apples – For this Magic Apple Cake, I recommend using sweet red apples like Gala, Fuji, or Red Delicious. These varieties are perfect because they stay firm during baking while releasing just the right amount of natural sweetness.
- Zest and juice of 1 lemon – adds freshness and prevents the apples from browning
- 80 g (about 1/3 cup) granulated sugar – for sweetness and to help create a light, fluffy batter
- 3 large eggs – at room temperature, essential for structure and creaminess
- 50 g (3½ tbsp) melted butter – melted but not too hot
- 150 g (1¼ cups) all-purpose flour – provides structure without making the cake dense
- 1 tsp baking powder – helps the cake rise gently
- 140 ml (½ cup + 2 tbsp) milk – adds moisture and helps create the creamy texture
- Ground cinnamon, to taste (optional)
- 2 tbsp brown sugar (optional) – sprinkled on top for a lightly caramelized finish
- Powdered sugar, as needed – for dusting before serving
Step-by-step Instructions for Magic Apple Cake

Prepare the apples
Start by grating the lemon zest and squeezing out the lemon juice. Peel the apples, remove the cores, and slice them very thinly (1). A sharp knife works well, but if you have a mandoline slicer, this will make the job much easier and give you evenly thin slices. Transfer the apples to a large bowl, pour over the lemon juice, and gently toss to coat them evenly. This will keep the apples from browning and add a fresh flavor.
Prepare the batter
In a bowl, sift together the flour and baking powder to remove any lumps and ensure a lighter batter later on.
In a separate large mixing bowl, combine the eggs and granulated sugar. Using an electric mixer, beat them together for about 10 minutes, until the mixture becomes pale, fluffy, and airy. This step is important, as it helps create the soft and creamy texture typical of magic-style cakes.
While continuing to mix, slowly add the melted butter, a little at a time. Once incorporated, pour in the milk, again gradually, and keep mixing until smooth. Add the grated lemon zest and mix briefly to distribute it evenly through the batter.

Gently fold the well-drained apple slices into the batter using a spatula, taking care to mix slowly so the apples are evenly distributed without breaking them (4).
Line a 24 cm / 9-inch springform pan with parchment paper. Pour the batter into the pan and level the surface with a spatula (5). Sprinkle the top evenly with brown sugar, which will give the cake a beautiful golden color and a slightly glossy finish during baking.

The Magic Apple Cake stays soft for about 3 days in the fridge, covered with parchment paper or stored in an airtight container.
