  • 30 g (2 tbsp / 1 oz) raisins
  • 60 g (¼ cup / 2 oz) extra virgin olive oil
  • 1 anchovy
  • 2 g (1 tsp / 0.07 oz) dried oregano
  • 1 medium orange, divided (1/2 juice and 1/2 sliced for the skewers)
  • 1 lemon
  • 1 clove of garlic
  • Salt to taste
  • Black pepper to taste
  • Bay leaves

How to Make Swordfish Skewers: Step-by-step Instructions

First, soak the raisins in warm water for about 10 minutes. This will help them soften and plump up, making them easier to mix into the filling and enhancing their natural sweetness.
