Whenever I taste mint, I immediately think of one drink that almost every Italian remembers: latte e menta.
Long before colorful energy drinks and fancy iced coffees became popular, cold milk mixed with bright green mint syrup was one of the most refreshing summer drinks you could have. It was sweet, incredibly aromatic, and almost every cafรฉ served it during the hottest months.
These Homemade Mint Popsicles are inspired by that nostalgic Italian flavor.
Instead of simply freezing mint syrup and water, I use milk and one small ingredient that completely changes the texture, making the popsicles much softer and more pleasant to bite.

Ingredients for Soft Mint Popsicles
Fresh Milk
Whole milk gives these popsicles their classic creamy flavor, just like traditional Italian mint milk.
Semi-skimmed milk also works, although the texture will be slightly lighter.
Mint Syrup
Mint syrup provides both the flavor and sweetness.
Choose a high-quality syrup with natural mint flavor for the freshest result.
If you prefer a stronger mint taste, simply add a little more syrup before freezing.
Whey Protein Isolate (The Secret Ingredient)
This is the ingredient that makes these popsicles different from most homemade recipes.
Whey protein isolate helps reduce the formation of large ice crystals, creating a smoother texture that’s much closer to commercial ice pops. Instead of freezing rock hard, the popsicles have a pleasantly soft, slightly powdery bite that’s typical of many store-bought popsicles.
If you don’t have protein powder, you can still make the recipe, but the popsicles will freeze much harder.
TIP: Use plain, unflavored milk protein powder. Avoid vanilla or sweetened protein powders, as they will noticeably change the flavor.
Green Food Coloring (Optional)
Mint syrup often gives only a pale green color.
If you’d like the classic bright green Italian mint popsicle, simply add a few drops of green food coloring.
This ingredient is completely optional but makes the popsicles look much more fun.
Which Protein Powder Works Best?
Not all protein powders work equally well in this recipe.
Whey Protein Isolate (Recommended): This is the best option. It dissolves easily, has a neutral flavor, and helps create a softer texture while adding very little lactose.
Whey Protein Concentrate: It can also be used, but it contains more lactose and may produce a slightly heavier texture.
Casein Protein: Not recommended. It absorbs much more liquid and creates a thicker mixture that freezes differently.
Flavored Protein Powders: Vanilla, chocolate, or other flavored protein powders will noticeably change the taste of the popsicles, so plain, unflavored whey isolate is the best choice.

Can I Replace the Milk?
Yes. While whole milk creates the classic creamy texture inspired by Italian latte e menta, you can use other liquids depending on your dietary needs.
- Lactose-Free Milk: The closest substitute to regular milk. It produces almost identical results while being suitable for people with lactose intolerance.
- Water: Using water creates a lighter, more refreshing popsicle with a stronger mint flavor. The texture will be slightly icier, but the whey protein isolate still helps keep the popsicles softer than traditional homemade ice pops.
- Oat Milk: Adds a naturally sweet flavor and produces a smooth, creamy popsicle.
- Almond Milk: Creates a lighter popsicle with a subtle nutty flavor that pairs well with mint.
- Soy Milk: Works well and provides a creamy consistency, although its flavor is slightly more noticeable.
- Coconut Milk Beverage: Adds a delicate tropical note that complements mint surprisingly well.
Popsicle Molds
Good molds make a huge difference. Silicone molds make it much easier to remove the popsicles, while BPA-free reusable molds are durable and perfect if you make frozen treats throughout the summer.
I recommend molds with reusable sticks and tight-fitting lids to keep the popsicles perfectly straight while freezing.

How To Make Homemade Mint Popsicles
Mix Everything Together:
Add the unflavored whey protein isolate to a mixing jug or bowl first. Gradually pour in a small amount of the milk while whisking continuously to create a smooth, lump-free mixture.
Once the protein powder has completely dissolved, add the remaining milk, the mint syrup, and, if using, a few drops of green food coloring. Whisk again until everything is well combined.
The mixture should be perfectly smooth before pouring it into the popsicle molds. This helps ensure your mint popsicles freeze with the best possible texture.
Fill The Popsicle Molds:
Pour the mixture into the molds, leaving a small gap at the top because the liquid expands slightly as it freezes. Insert the sticks according to your mold’s instructions.
Freeze Until Firm:
Freeze for at least 6 hours, although overnight produces the best texture.
Unmold Easily:
Run the outside of the molds under cool or slightly warm water for a few seconds. The popsicles should slide out without breaking.
Your mint popsicles should have a pleasantly soft bite thanks to the whey protein isolate, giving them a texture that’s much closer to store-bought popsicles than traditional homemade ice pops.
How To Store Homemade Mint Popsicles
Keep the popsicles inside their molds or transfer them to freezer bags once fully frozen.
They keep well for about 2 months without losing flavor.

Homemade Mint Popsicles That Stay Soft: The Easy Trick You’ll Love
Ingredients
- 500 ml whole milk
- 120 ml mint syrup
- 30 g or 1 scoop unflavored whey protein isolate
- Drops green food coloring optional
Instructions
- Add the whey protein isolate to a mixing bowl or measuring jug.
- Gradually whisk in a small amount of the milk until the protein powder is completely dissolved and no lumps remain.
- Pour in the remaining milk, then add the mint syrup and the green food coloring, if using. Whisk until the mixture is smooth and evenly combined.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert the sticks according to your mold’s instructions.
- Freeze for at least 6 hours, or preferably overnight.
- To unmold, run the outside of the molds under cool or lukewarm water for a few seconds before gently pulling out the popsicles.
