How to Make Healthy Rainbow Popsicles Step by Step

These Rainbow Yogurt Popsicles may look impressive, but they’re actually one of the easiest frozen treats you can make at home.

The secret to achieving those beautiful rainbow layers is patience. Each layer only needs about 10 to 15 minutes in the freezer before adding the next one, which is just enough time to keep the colors separated without completely freezing the popsicles.

Start by blending the blueberries with a portion of the vanilla yogurt until completely smooth. If you’re using frozen berries, make sure they’re fully thawed first. This will help create a smoother mixture and more vibrant color. Divide the blueberry mixture evenly among your popsicle molds and place them in the freezer.

While the first layer is chilling, prepare the raspberry layer. Once the blueberry layer has slightly firmed up, carefully pour the raspberry mixture on top. There’s no need to wait until the layer is fully frozen. In fact, slightly soft layers help the colors bond together without creating gaps.

Continue in the same way with the peach layer and then the mango layer. Try pouring slowly and evenly to maintain clean color separation. A small measuring cup or pitcher can make this process much easier and less messy.

For the final green layer, blend the spinach with the remaining yogurt until completely smooth. Don’t worry if the mixture looks very green at this stage. Once frozen, the flavor remains mild and the spinach is barely noticeable.

After adding the final layer, insert the popsicle sticks and freeze overnight. This ensures the popsicles become fully solid and easy to unmold.

  • 500 g vanilla yogurt regular or plant-based
  • 50 g blueberries
  • 50 g raspberries
  • 50 g ripe peaches diced
  • 50 g ripe mango diced
  • 50 g fresh spinach

Instructions

  1. Add the blueberries and about 80 g of yogurt (1/3 cup) to a blender. Blend until completely smooth. Divide among 12 popsicle molds and freeze for 10–15 minutes.
  2. Add the raspberries and another 80 g of yogurt (1/3 cup) to the blender. Blend until smooth. Pour over the blueberry layer and freeze for 10–15 minutes.
  3. Blend the peaches with another 80 g of yogurt (1/3 cup) until smooth. Pour over the raspberry layer and freeze for 10–15 minutes.
  4. Blend the mango with about 120 g of yogurt (1/2 cup) until smooth. Pour over the peach layer and freeze for 10–15 minutes.
  5. Blend the spinach with the remaining yogurt (1/2 cup) until smooth. Pour over the mango layer. Insert popsicle sticks and freeze overnight until completely firm.
  6. Remove from the molds and enjoy.
