Ingredients

For about 8 servings:

  • 3 medium eggplants (or 5 small) – washed
  • 2 eggs
  • 250 g breadcrumbs (about 2 cups)
  • 50 g grated Parmesan (about 1/2 cup)
  • 1 tablespoon paprika
  • 1/2 teaspoon ground black pepper
  • 1 jar marinara sauce (about 600 g or 24 oz)
  • 5–6 ripe tomatoes, thickly sliced
  • 15–20 slices mozzarella cheese (about ½ cm thick)
  • 2 tablespoons chopped fresh basil leaves, plus other leaves for topping
  • Extra virgin olive oil, for brushing or drizzling
  • Salt, to taste

How to Make Millefeuille of Eggplants

Prep the Eggplant

Slice the eggplants into rounds about 1 cm (½ inch) thick. Lay them out on a tray lined with paper towels and sprinkle lightly with salt. You can stack them in layers — just make sure to place paper towels between each layer (1). Let them sit for 30 minutes to release moisture, then gently pat dry.

Coat and Bread the Slices

In a shallow bowl, beat the eggs. In another bowl, combine breadcrumbs with paprika, black pepper, 2 tablespoons of chopped parsley, a pinch of salt, and Parmesan (2).

Dip each eggplant slice into the egg mixture, drain off the excess egg well, then coat well with the seasoned breadcrumbs (3). Set aside on a clean tray.

Cook the Eggplant

Preheat your air fryer to 180 °C (355 °F) for 3 minutes. Drizzle eggplants with olive oil (4)

and arrange the slices in a single layer on the grid (you’ll need to cook in batches). Air fry for 4–5 minutes, flip (5), then cook another 1–2 minutes until golden and crispy.

No Air Fryer? Cook them in the Oven: Preheat oven to 200 °C (392 °F). Arrange slices on a parchment-lined baking tray. Bake for 10 minutes, flip each slice, then continue baking until golden brown.

Assemble the Millefeuille

On a large serving tray or platter, begin layering:

  1. Start with an eggplant slice.
  2. Add a small spoonful of marinara sauce (6).
  3. Place a tomato slice on top, and sprinkle with a pinch of salt.
  4. Add another eggplant, a spoonful of marinara sauce then a slice of mozzarella (7), and finish with one last slice of eggplant.

Sprinkle extra Parmesan and a drizzle of olive oil over each stack (optional), then top each with a fresh basil leaf and secure with a toothpick (8). Serve at room temperature.

How to Store Eggplant Millefeuille

You can store assembled millefeuille stacks in the fridge for up to 2 days. Just let them come back to room temperature before serving. If you’d like to enjoy them warm, give them a quick reheat in the air fryer or oven for 5–6 minutes at 160 °C (320 °F).
