These oven-roasted potatoes are exactly that: crispy and golden on the outside, soft and fluffy on the inside. They’re the kind of potatoes people keep “taste-testing” straight from the pan. And once you try them this way, there’s really no going back.

Which Potatoes Are Best for Roasting?

If you’re aiming for roasted potatoes that are crispy on the outside and tender on the inside, choosing the right variety makes a big difference.

Yellow-fleshed potatoes and red potatoes are the best choices for oven roasting. Compared to white potatoes, they contain less starch, which means their flesh is naturally firmer and more compact. This texture holds up beautifully in the oven and makes it easier to achieve that perfect contrast between a golden crust and a soft center.

White potatoes, on the other hand, tend to be softer and more floury. They’re excellent for mashed potatoes, gnocchi, croquettes, and fillings of savory cakes — but they’re less reliable for roasting.

Yellow and red potatoes are also great for frying and pan-cooking, and they’re generally more forgiving if you’re looking for evenly cooked, crispy roasted potatoes.

Some popular yellow potato varieties to look for include Blondine Yellow, Spunta, Primura, Bintje, Jelly, Capuchine, German, and Penelope. Among red potatoes, good options are Cherie, Desiree, Yona, Stemster, Mozart, Sunred, Red Potatoes of Colfiorito IGP, and Zoe (which also has red flesh, not just red skin).

Once you’ve chosen the right potatoes, you’re already halfway to a perfect tray of oven-roasted potatoes.

  • Potatoes – choose starchy or all-purpose potatoes; peel them and cut into evenly sized chunks.
  • Water – for boiling the potatoes.
  • Baking soda – This is the secret ingredient that helps create an ultra-crispy exterior. Don’t omit it!
  • Sea salt
  • Garlic clove – peeled and finely minced; fresh garlic gives the best aroma.
  • Extra virgin olive oil – use a good-quality olive oil for maximum flavor and crispiness.
  • Fresh rosemary sprig – rinsed, dried, and finely chopped.
  • Freshly ground black pepper.

Prep the Potatoes Properly

Start by peeling the potatoes and cutting them into evenly sized chunks (1). Rinse them in a bowl of cold water, changing the water a few times, until it runs clear. This removes excess starch and helps prevent sogginess later on.

Boil with Baking Soda (The Secret Step)

Bring the water to a rolling boil in a large pot. Add the baking soda and salt, then carefully add the potatoes. Once the water returns to a boil, cook the potatoes for 5 minutes (2). Drain and immediately rinse the potatoes under cold running water. This stops the cooking and removes any excess baking soda taste.

Don’t skip boiling the potatoes, becouse you won’t get the same crispy exterior and fluffy interior.

Why add baking soda to the water? It breaks down the potato surface, creating a rough texture that turns extra crispy in the oven.

Season Generously

Transfer the potatoes to a large bowl. Add the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Toss gently until every piece is well coated (3) and slightly rough around the edges—this texture is exactly what you want.

Roast Until Golden and Crispy

Preheat your oven to 240°C / 465°F. Arrange the potatoes in a single layer on a baking sheet (4), making sure they’re not crowded. Place the tray on the lower oven rack.

Bake for 20 minutes, then carefully turn each potato piece individually. Return to the oven and bake for another 10–15 minutes, until deeply golden and irresistibly crispy (5).

Remove from oven and let rest for 5 minutes, then serve hot, as a delicious side dish.
