In a medium-sized mixing bowl, combine your choice of thick, plain Greek yogurt with the protein powder until smooth and creamy. Use a whisk or silicone spatula to stir the mixture vigorously until it becomes completely smooth and velvety, ensuring there are no remaining clumps of powder. If you prefer a sweeter treat, add a few drops of liquid stevia or your favorite low-calorie sweetener to taste.

Next, prepare a freezer-safe container or a rimmed baking sheet by lining it with parchment paper to prevent sticking. Carefully transfer the yogurt mixture onto the paper, using an offset spatula to spread it into an even layer. The thinner you spread the mixture, the more it will resemble a traditional “yogurt bark,” making it much easier to break or cut into bite-sized pieces once it’s fully set.

Slide the tray into the freezer and let it chill for approximately 2 to 3 hours. Once the top is firm enough to hold toppings without them sinking, remove it from the freezer. Artfully drizzle your favorite sugar-free syrup over the surface and scatter the chopped walnuts evenly across the top for an added layer of texture and healthy fats. Return the container to the freezer for at least another 2 hours, or until the mixture is completely solid. When ready to serve, simply lift the parchment paper, break the bark into 12 or more small bars, and enjoy your high-protein snack immediately.
